Kirghiz Baked Beef

2 pounds flank steak -- chopped 1/2 inch
1 large onion -- chopped
1 medium green pepper -- chopped
2 tablespoons olive oil
1 cup yogurt -- (plain)
2 large eggs
2 medium apples diced
1 cup chopped dried apricots
1/2 cup raisins
1/2 cup prunes dried -- pitted and chopped
2 tablespoons curry powder
1 teaspoon salt
2 teaspoons pepper

Preparation / Directions:

Sauté onion and green pepper in olive oil in lg. heavy skillet until onion is transparent. Add chopped beef and brown lightly. Pour off drippings. Add eggs, apple, apricots, curry powder, salt and pepper to beef. Add yogurt and mix well. Place in a large, deep casserole and bake in a 350 degree F. for 45 minutes.
