1 package instant chicken broth and seasoning mix
1 1/2 cups water
1 cup chopped well-washed spinach leaves
2 tablespoons sliced scallion -- (green onion)
1 large egg white
2 ounces skinned and boned cooked chicken -- , cut into thin strips
1 dash ground ginger
1 dash pepper

Preparation / Directions:

Empty broth mix into small saucepan; add water and bring to a boil. Add spinach and scallions and return to a boil. Reduce heat and slowly add egg white, stirring constantly, until eghg white has set. Add chicken seasonings and cook until throughly heated. Variation: Substitute instant beef or onion broth mix for the chicken broth mix and use cooked beef or pork, cut into strips.
