Quick Pozole

Ingredients:


2 tablespoons vegetable oil

1 medium Onion -- chopped

2 medium bonless skinless chicken breast halves -- cut into 1-, inch cubes

1 can hominy -- (15 ounces) drained

2 cups garlic salsa -- medium

1 tablespoon fresh lime juice

1/4 cup chopped fresh cilantro

1/2 head cabbage -- shredded

10 medium radishes -- thinly sliced
 

Preparation / Directions:


Heat oil in heavy large saucepan over medium-high heat. Add onion and saute until tender, about 5 minutes. Add chicken and saute until browned, about 5 minutes. Add broth and hominy to saucepan and simmer 10 minutes. Add salsa and simmer 5 minutes. Stir in lime juice and cilantro. Season to taste with salt and pepper. To serve, ladle into bowls. Top with cabbage and radishes. Prep Time: 10 minutes Cook Time: 25 minutes Makes: 4 servings Pozole is a Mexican stew made many different ways, but always with hominy. Hominy is dried white or yellow corn kernels from which the hull and germ have been removed. Here I add diced chicken and Safeway salsa to the hominy.
