Latino Chicken Salad

Ingredients:

3/4 pound skinless boneless chicken breasts
1 cup dried fruit
1 cup orzo
1 cup jicama
1/2 cup scallions
1/2 cup mayonnaise
2 teaspoons sour cream
1 teaspoon red pepper flakes
1/4 teaspoon salt
 

Preparation / Directions:

combine chicken and salted water to cover in a saucepan, over a high flame heat to a boil, reduce heat, and simmer for 15-20 minutes, until tender remove chicken with a slotted spoon, cut into 1/2-inch pieces bring water in pan to a boil, over a moderately-high flame add dried fruits and orzo slowly, to keep water boiling boil for 10 minutes, stirring once or twice drain, rinse in cold water, and drain well combine ingredients-toss to mix well cover and chill for 2-96 hours serve slightly chilled or at room temperature
