Grilled Walnut Chicken

Ingredients:


5 pounds walnuts

2 cups fresh lime juice

2 cups fresh orange juice

2 cups fresh lemon juice

1/3 cup white wine

1/4 cup garlic

3 cups scallions

1 cup chicken stock

1 teaspoon dry mustard

1/4 teaspoon salt

1/4 teaspoon white pepper

1/4 teaspoon cayenne

6 cups plain yogurt

50 pieces skinless boneless chicken br

50 cups cooked rice
 

Preparation / Directions:


combine walnuts (reserving a few as garnish), lime juice, orange juice, lemon juice, wine, garlic, scallions, chicken broth, and dry mustard in a food processor process until smooth and well blended combine yogurt with 3 cups walnut mixture-mix well coat both sides of chicken breasts with yogurt mixture cover and chill for 4-48 hours grill or broil for 10 minutes per side, until juices run clear when pierced with a fork serve hot, with the remaining yogurt mixture and hot cooked rice to the side
