Ingredients:

6 pounds boneless chicken
1 teaspoon kosher salt
6 pounds frozen spinach
24 ounces coconut milk
 

Preparation / Directions:

combine chicken and salt with water to covere, in a large saucepan or stockpot, over a moderate flame heat to a boil, reduce heat, and simmer for 45 minutes, until tender remove from heat and drain well cut chicken into bite-size pieces, set aside squeeze excess moisture from spinach combine spinach, chicken, and coconut milk in a saucepan, over a low flame heat through, without boiling arrange onto a serving dish garnish as desired serve hot
