1 pound boneless skinless chicken breasts
1/8 cup flour
2 tablespoons olive oil
1 clove garlic
1 small onion -- chopped
1 medium green pepper -- chopped
2 cups canned tomatoes -- undrained
1 cup chicken broth
1 1/2 tablespoons curry powder
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper -- freshly ground
1/4 cup raisins
4 cups cooked rice -- hot
1/4 cup slivered almonds -- toasted
1 tablespoon fresh parsley -- minced

Preparation / Directions:

Dust chicken lightly with flour; saute chicken in hot oil in nonstick pan until lightly browned on all sides, about 15 minutes. Remove chicken from pan. Reserve. Add garlic, onion, and green pepper to pan;saute until onion is limp and golden. Return chicken to pan. Add tomatoes, broth, curry, thyme, salt, and pepper; bring to boil. Lower heat; cover and simmer gently 15 minutes. Add raisins; simmer uncovered 15 minutes longer. Serve with rice. Sprinkle with almonds and fresh parsley.
