Preparation:
Dust chicken lightly with flour; saute chicken in hot oil in nonstick pan until lightly browned on all sides, about 15 minutes. Remove chicken from pan. Reserve.
Add garlic, onion, and green pepper to pan;saute until onion is limp and golden. Return chicken to pan. Add tomatoes, broth, curry, thyme, salt, and pepper; bring to boil. Lower heat; cover and simmer gently 15 minutes. Add raisins; simmer uncovered 15 minutes longer. Serve with rice. Sprinkle with almonds and fresh parsley. |
