Chicken Loaf And Mushroom Sauce

4 pound chicken -- cooked and diced
2 cups fresh bread crumbs
3 cups milk
1 cup cooked rice
1/4 cup pimento
4 large eggs -- well beaten
1/4 cup butter
8 ounces mushrooms
1/2 cup flour
1/2 cup cream
1/4 teaspoon salt
1/4 teaspoon paprika
1/2 teaspoon lemon juice
1 pint chicken broth
1 tablespoons Parsley

Preparation / Directions:

Mix together, adding eggs last. Bake 1 hour at 350F in bak- mg dish. Serve with mushroom sauce. Mushroom Sauce: Melt butter in saucepan; add mushrooms, cut coarsely and cook gently for 5 minutes, stirring occasionally. Add flour and mix well. Then add chicken broth, cook, stirring constantly until thickened. Add cream, paprika, parsley, lemon juice and salt. Mix and warm over double boiler.
