My Favorite Cheesecake

This produces a 'wet' cheesecake...my favorite kind. I have been making this for 30+ years and it continues to draw raves every time. I believe I obtained the recipe from The Campbell's Soup Company.
 

Ingredients:


12 ounces Cream Cheese, softened

2/3 Cup Sugar

3 large Eggs

1 Cup Condensed Cheddar Cheese Soup

2 tablespoons Lemon Juice

1 teaspoon Grated Lemon Rind

1 teaspoon Vanilla

1/4 teaspoon Almond Extract

1 crust Graham Cracker Crust, chilled

---Topping:

1 Cup Sour Cream

---Remaining Soup

1/4 Cup Sugar

1 teaspoon Grated Lemon Rind

1 teaspoon Vanilla

1 can Cherry Pie Filling, opt.
 

Preparation / Directions:


Blend Cream Cheese until smooth. Alternately beat in 2/3 C Sugar and Eggs. Blend in 1 C Soup, 2 T Lemon Juice 1 t Lemon Rind and Extracts. Pour into chilled crust. Bake @ 350* 50 minutes. Combine Topping ingredients. Spread on pie. Bake 5 minutes longer. Cool. Chill. Garnish with Cherry Pie Filling, if desired.
