Ham and Broccoli Casserole

Ingredients:


1/2 pound broccoli pieces -- fresh or frozen

1 tablespoon water

1 pound cooked ham -- cut in 1/2 inch cubes

1/2 cup onion -- minced

3 cups cooked rice

1 cup cheddar cheese -- grated

4 whole eggs -- beaten

1 can cream of chicken soup

1/4 teaspoon pepper

1 1/2 teaspoons prepared mustard
 

Preparation / Directions:


1. Place broccoli and water in a 2 quart casserole. Cover. 2. Microwave at high (100%) until tender-crisp, 5 to 6 minutes. 3. In a large bowl combine broccoli, ham, onions, rice and half the cheese. 4. Blend eggs, soup and seasoning. Stir into rice mixture. 5. Turn mixture into a 2 quart casserole. 6. Microwave at medium high (70%) until firm around edge, 10 to 1 2 minutes. 7. Sprinkle with remaining cheese. 8. Microwave at medium high (70%) until cheese melts, 3 to 4 minutes. Makes 6 generous servings.
