Ingredients:

1 LARGE CHOPPED ONION
8 SLICES BACON FRIED AND CRUMBLED
2 tablespoons BACON DRIPPINGS
2 CANS SPINACH DRAINED(OR TWO BOXES OF FROZEN SPINACH COOKED ACCORDING TO DIRECTIONS ON BOX)
2 large eggs
1 teaspoon salt and PEPPER TO TASTE
 

Preparation / Directions:

FRY BACON, CRUMBLE, AND SET ASIDE.SAUTE ONIONS IN BACON DRIPPINGS THEN ADD DRAINED SPINACH AND THEN ADD EGGS STIRRING QUICKLY TILL THE EGGS ARE MIXED IN WELL, ADD BACON TURN OFF HEAT SEASON TO TASTE.
