Spicy Okra Skillet

2 medium onions -- chopped
1/2 cup celery -- sliced
2 tablespoons vegetable oil
4 medium tomatoes -- peeled, seeded and chopped
1 teaspoon dried italian seasoning
2 cups okra -- sliced
1/2 teaspoon salt
1/4 teaspoon pepper

Preparation / Directions:

Cook onion and celery in oil in a large skillet over medium-high heat, stirring constantly, until crisp-tender. Add tomatoes and Italian seasoning. Cover, reduce heat to medium, and cook 10 minutes. Add okra, salt, and pepper; cover and simmer 5 minutes or until okra is tender.
