MEDITERRANEAN CELERY

Ingredients:


8 medium Stalks celery (about 1 -- pound)

1/4 cup Sliced ripe olives

1/4 cup Chopped fresh parsley

2 tablespoons Olive or Vegetable oil

1 tablespoon White wine vinegar

1 1/2 teaspoons Chopped fresh or 1/2 ts -- Dried oregano leaves

1 small Tomato -- seeded and chopped

1 Clove Garlic -- crushed
 

Preparation / Directions:


The classic ingredients of Italian cooking are here-olives, olive oil,. Prepare and cook celery as directed - except cut into 1/4-inch slices and boil 3 to 5 minutes or until crisp-tender. Mix all ingredients.
