Frozen Cubed Potatoes

Ingredients:


4 large peeled potatoes -- cut in 1/2 inch cubes

2 cups water

1 medium Onion -- diced

1 medium green pepper -- diced
 

Preparation / Directions:


Peel potatoes and cut into cubes. Place in boiling water for 1 to 2 minutes. (reserve water for potato bread) Drain well and spread on cookie sheet. Air dry and then flash freeze along with diced green pepper and onion. May be used in many dishes. Fry up with leftover roast beef or hamburger for hash
