CURRIED Cauliflower

Ingredients:

1 medium cauliflower (about 2 pounds)
2 tablespoons Margarine or butter
2 tablespoons All-purpose flour
1 teaspoon Curry powder
1/4 teaspoon Salt
1 Dash pepper
1 cup Milk
1 cup Shredded process american -- Cheese (4 ounces)
1 teaspoon Paprika
 

Preparation / Directions:

Prepare and cook cauliflower as directed for cauliflowerets or whole cauliflower. Heat margarine in 1-1/2-quart saucepan over medium heat until melted. Stir in flour, curry powder, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese. Cook and stir over low heat until cheese is melted. Pour over hot cauliflower. Sprinkle with paprika.
