Crispy Vegetable Bites

Ingredients:

1 cup dry breadcrumbs
1/4 cup parmesan cheese
1 teaspoon paprika
1 teaspoon kosher salt
2 large egg
1 cup cauliflower florets
1 cup carrot
1 cup eggplant
1 Cup peanut oil
 

Preparation / Directions:

combine breadcrumbs, parmesan cheese, paprika, and half the salt combine eggs, 1 tablespoon water, and remaining salt-mix well dip vegetables into egg mixture roll in crumb mixture to coat evenly place onto a sheet of parchment or waxed paper repeat with remaining vegetables chill for 1-24 hours heat oil to 375 degrees fry vegetables, in small batches, until golden drain well on a cooling rack and blot with paper towels serve hot or warm.
