Creole Kidney Beans

Ingredients:

4 Slices bacon -- diced
1 Cup onion -- chopped
1/4 Cup green pepper -- diced
1 Tablespoon sugar
1/2 Teaspoon salt
1/2 Teaspoon pepper
1 Cup canned tomatoes
2 Cans kidney beans -- 1 Lb. each
 

Preparation / Directions:

Place bacon in a 1 1/2 quart casserole. Cover with a paper towel. Microwa= ve at high (100%) until brown, 3 1/2 to 4 minutes. Drain all but 1 tablespoo= n bacon fat. Add onion and pepper. Cover. Microwave at high (100%) until onion is tender, 3 to 4 minutes. Add remaining ingredients Microwave at medium high (70%) until heated through, 8 to 10 minutes. Makes 6 servings.
