Carrot Tzimmes

Ingredients:


1 pound carrots -- peeled and grated

1 large yam -- peeled and grated

1 pound granny smith apples -- peeled

1/4 pound prunes coarsely chopped

1/4 cup white raisins

1/4 cup dried -- pitted cherries

1/2 cup brown sugar -- packed

1 cup crushed pineapple--dont dra

1/2 cup matzo meal

1 dash nutmeg

1 dash salt

1 dash cardamom -- (optional)

1/4 pound margarine -- melted and divide

1 tablespoon brown sugar

1 teaspoon cinnamon

1 tablespoon matzo meal

2 tablespoon reserved melted margarine
 

Preparation / Directions:


1. Mix together all ingredients except the topping ingredients and only half of the margarine. 2. Coat a terrine, souffle dish or individual ramekins with margarine. 3. Pour mixture into prepared dish. 4. Combine topping ingredients and spread over top. 5. Bake at 350 deg. for 1 1/2 to 2 hours. 6. It can be prepared a day ahead, but bake the day you want to eat it. 7.
