Ingredients:

   1      pound         carrots -- peeled and grated
   1      large         yam -- peeled and grated
   1      pound         granny smith apples -- peeled
     1/4  pound         prunes coarsely chopped
     1/4  cup           white raisins
     1/4  cup           dried -- pitted cherries
     1/2  cup           brown sugar -- packed
   1      cup           crushed pineapple--don't dra
     1/2  cup           matzo meal
   1      pinch         nutmeg
   1      pinch         salt
   1      pinch         cardamom -- (optional)
     1/4  pound         margarine -- melted and divide
   1      tablespoon    brown sugar
   1      teaspoon      cinnamon
   1      tablespoon    matzo meal
                        reserved melted margarine
 

Preparation:

1. Mix together all ingredients except the topping ingredients and only half of the margarine. 2. Coat a terrine, souffle dish or individual ramekins with margarine. 3. Pour mixture into prepared dish. 4. Combine topping ingredients and spread over top. 5. Bake at 350 deg. for 1 1/2 to 2 hours. 6.
