Beets In Orange Sauce

Ingredients:


4 large beets trimmed

1 cup orange juice

2 tablespoons sugar

2 tablespoons butter

1 tablespoon orange zest -- minced

2 teaspoons red wine vinegar
 

Preparation / Directions:


1. Preheat oven to 400F. Wrap 2 beets together in foil, repeat with remaining beets. Place on baking sheet, and bake about 1 hour 15 minutes until tender. Cool and peel beets, cut into 8 wedges. 2. combaine beets and remaining ingredients in medium nonaluminum saucepan. Simmer over medium heat until sauce is syrupy, stirring down often, about 8 minutes. Season with salt and pepper
