David Burke's Tuna in Mustard Crust with Watercress and Shr

Ingredients:


4 fillets tuna steak -- 6oz

12 medium shrimp -- peeled and deveined

1/8 teaspoon coarse or kosher salt -- to taste

1/8 teaspoon freshly ground pepper -- to taste

2 large egg whites -- lightly beaten

1/4 cup grey poupon dijon mustard

1 cup fresh bread crumbs

1/2 cup olive oil

2 bunches watercress -- cleaned

3 tablespoons soy sauce

1 teaspoon chopped ginger

2 tablespoons grey poupon honey mustard
 

Preparation / Directions:


Season tuna and shrimp with salt and pepper; set aside Blend egg whites and dijon mustard in small bowl. Dip tuna in mustard mixture to coat; roll in bread crumbs. Heat oil in large skillet ar saute pan over medium heat. Add tuna; cook on both sides to desired doneness. Remove from pan; keep warm. Add shrimp to skillet; cook and stir for 2 to 3 minutes or until firm. Add watercress, soy sauce, ginger and honey mustard; cook for 1 to 2 minutes more, or until heated through. Place watercress mixture on plate; slice tuna and fan out around watrcress. Serve tieh additional honey mustard if desired.
