Baked Tomatoes With Cheese Sauce

Ingredients:


2 medium tomatoes

1 teaspoon finely chopped green onions

1/4 teaspoon basil crushed

1 teaspoon freshly ground black pepper

1 teaspoon sweet butter

1 cup milk

2 tablespoons cream of rice

1/4 cup shredded mild cheddar cheese

1 jar yellow food coloring -- optional

2 slices salt free bread -- toasted
 

Preparation / Directions:


Wash tomatoes and cut out stem ends; cut in half. Place in a lightly oiled shallow baking dish, cut side up. Sprinkle with onion, basil and pepper and dot with butter. Bake in a preheated 375 degree oven about 30 minutes. Scald milk and sprinkle in cream of rice and cook, stirring constantly, for 1 minute. Remove from heat, cover and let stand 4 minutes. Add cheese; stir until melted. If desired, add a drop of food color. Place 2 tomato halves on each piece of toast and top with sauce. Garnish with a sprig of parsley or basil. Makes 2 servings.
