Ingredients:


4 ounces butter

1 1/2 pound large red onions -- very thinly sliced

1 1/2 ounces lard

7 ounces flour

3 large eggs

8 ounces milk

1/4 teaspoon salt and freshly ground black pepper
 

Preparation / Directions:


Preheat the oven to 220°C (425F). Melt half the butter in a heavy pan, add the onions, cover and cook very slowly until they start to soften. Rub the remaining butter and the lard into the flour, then bind together with a little water to form a firm dough. Roll the pastry out to line a 8-9in flan case. beat the eggs with the milk, salt and pepper, add the onions and pour mixture into the pastry case. Bake for 35-40 mins until the pastry is cooked and filling is firm and golden brown. Serve hot or cold with veg or salad.
