Crock Pot Fish Stew A La Carolyn

Ingredients:


3 Large Red Snapper Or Flounder 1 1/4 To 1 1/2 Lb -- cut in 2 inch pieces

2 Tablespoons Olive Oil Or Melted Butter

1 Clove garlic

1 Large onion -- sliced

1 medium Green Pepper -- cut in 1 inch pieces

1 medium Zucchini unpeeled and sliced

15 ounces whole tomatoes

1/2 Teaspoon leaf basil

1/2 Teaspoon leaf oregano

1 Teaspoon salt

1/8 Teaspoon pepper

1/4 Cup Dry White Wine

1/2 Cup Fresh Mushrooms ( To 3/4 Cup) -- optional
 

Preparation / Directions:


Combine all ingredients in crockpot. Stir gently, but thoroughly. Cover and cook on High setting for 4 to 6 hours. Makes 6 servings (about 3 quarts).
