Squash Patties

Ingredients:


2 medium yellow squash

1/2 package stack saltine crackers

1/2 medium Onion

1/2 Medium bell pepper

1 Medium hot pepper if desired

1 large egg

1 teaspoon creole seasoning to taste
 

Preparation / Directions:


Cook squash until tender. Drain and mash with fork. Add other ingredients and make into patties. If not thick enough, add a few more crushed crackers. Roll in crushed cracker crumbs, and fry in deep fat until brown.
