Sausage, Cabbage And Mushroom Soup

Ingredients:


8 ounces low-fat turkey kielbasa sausage

1 pound sliced mushrooms -- (about 5 cups)

2 cans chicken broth -- (14 1/2 ounces each)

1 can white kidney beans -- (cannellini), (15 ounces) drained and rinsed

3 cups packaged coleslaw mix

1 Cup sour cream for garnish -- if desired
 

Preparation / Directions:


Cut sausage in half lengthwise and thinly slice. Place sausage, mushrooms, broth., beans and coleslaw in a large saucepan. Bring to a boil, reduce heat to medium-low and simmer, covered, for 15 minutes. Ladle into soup bowls and top with a dollop of sour cream, if desired. Prep Time: 12 minutes Cook Time: 15 minutes Makes: 6 servings
