Creamy Broccoli Soup

2 tablespoons minced onion
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 1/2 teaspoons salt
3 cups milk
3 cups chicken broth
10 ounces frozen chopped broccoli* -- slightly thawed
2 cups carrots -- thinly sliced
1 teaspoon salt and pepper -- to taste

Preparation / Directions:

Saute onion in butter until tender; stir in flour and 1 1/2 tsp salt. Gradually add milk, stirring constantly; bring to a boil. Add broth, broccoli, and carrots. Cook over low heat about 25 min or until carrots are tender; stir occasionally. Do not boil. Add salt and pepper to taste.
