Ingredients:


2 medium onions, cubed

8 strips bacon, chopped

3 quarts hominy, undrained
 

Preparation / Directions:


Saute onions and bacon in a skillet until brown, pour off grease, add hominy, leaving in the juice. Simmer for 1 hour. Serves ten. To make smaller portions, use 1 can hominy, 4 strips bacon and one small onion.
