Hearty Bacon Potato Chowder

This soup is thick and hearty with great flavor! It's quick and easy to fix. Great with blueberry muffins!
 

Ingredients:


7 slices bacon, cut into 1 inch pieces

1 Cup onions (2 medium) chopped

2 Cups potatoes (6 medium) cubed 1/2 inch

1 Cup dairy sour cream

1 1/4 Cup Milk

10 3/4 ounces condensed cream of chicken soup

8 ounces whole kernal corn (optional)

1/4 teaspoon ground black pepper

1/4 teaspoon thyme leaves (optional)
 

Preparation / Directions:


In frying pan cook bacon pieces over medium heat until crispy. Remove bacon bits from pan and drain on paper towel. Add chopped onion to remaining bacon grease and cook until clear or tender. Remove onions from pan and drain on paper towel. In 3 quart saucepan cook potatoes in 1 C water over medium heat just until fork tender (10-20 minutes) Add remaining ingredients,including onions and bacon. Cook on low heat, stirring occasionally, until hot (10-12 minutes)
