Summer Surprise Soup

Ingredients:


2 tablespoons virgin olive oil

1 medium chopped red bell pepper

1 medium scallion -- to taste

6 medium standard mushrooms -- chopped, up to 7

3 medium shiitake mushrooms -- chopped, up to 4

3 medium oyster mushrooms -- chopped, up to 4

1 can chicken broth

1 medium chicken breast -- chopped

1 bunch summer type herbs -- to taste

1 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Saute all mushrooms and vegetables til lightly brown. Add cut up chicken breast and broth with the herbs desired and simmer about 30 minutes. Add water as needed. Check seasonings and serve.
