Ingredients:

                        chopped red bell pepper
                        scallion -- to taste
  6                     standard mushrooms -- chopped, up to 7
  3                     shiitake mushrooms -- chopped, up to 4
  3                     oyster mushrooms -- chopped, up to 4
  1                can  chicken broth
  1                     chicken breast -- chopped
                        summer type herbs -- to taste
                        salt and pepper -- to taste
 

Preparation:

Saute all mushrooms and vegetables til lightly brown. Add cut up chicken breast and broth with the herbs desired and simmer about 30 minutes. Add water as needed. Check seasonings and serve.
