Strawberry Soup With Pound-Cake Croutons

Ingredients:


4 cups sliced strawberries

1 medium banana -- quartered

1 cup pineapple -- orange or banana juice

1 cup light sour cream

3 ounces cream cheese

1 tablespoon raspberry liqueur

2 pieces ice cubes

1 1/2 cups pound cake -- cubed

6 sprigs fresh mint -- garnish
 

Preparation / Directions:


In a food processor blend strawberries, banana, juice, sour cream, cream cheese, and liqueur until smooth. Add the ice cubes to chill the liquid. Preheat the oven to broil. Place cake pieces on a cookie sheet and broil to a golden brown (about six minutes). Pour soup into bowls and top with pound-cake croutons, or serve the croutons on the side. Garnish with a sprig of mint. You may want to dip croutons in chocolate before serving.
