Preparation / Directions:Combine meatball ingredients (first 6 listed) in a bowl and mix well. Shape meat mixture into 1 1/4-inch balls (about 16). Set aside. Bring broth to a boil in a large pot. Drain rice, then stir rice and mushrooms into broth. Reduce heat, cover, and simmer for 15 minutes. Add meatballs, Chinese cabbage or lettuce, water chestnuts, sesame oil, pepper, and salt, if desired. Cover and simmer for 10 minutes. Serve hot.
