Hot and Sour Shrimp Soup

Ingredients:


1 pound medium shrimp -- peeled

1 tablespoon vegetable oil

1 tablespoon garlic chopped

6 cups chicken stock -- up to 7

2 pieces stems lemon grass -- chopped

4 pieces kafir lime leaves

4 slices galangal

2 tablespoons fish sauce

1/2 cup lime juice -- or lemon

2 tablespoons coriander -- chopped

3 medium scallions -- chopped

2 medium chiles -- seeded and sliced

1 cup mushrooms -- quartered
 

Preparation / Directions:


1. Heat the oil then fry the garlic until it becomes crispy. Remove the garlic. 2. Using the same oil, fry the lemon grass, galangal, and chile for 2 minutes. 3. Add in the chicken stock and cook until it boils. Add the lime leaf and cook for another 3 minutes while adding the mushrooms and shrimps. 4. Add lime juice, fihs sauce, coriander and scallion.
