Hearty Garlic Soup

Ingredients:


2 cups sliced onions

1 cup sliced green pepper

2 tablespoons olive oil

20 cloves garlic -- peeled and sliced

3 cups canned chopped tomatoes

2 cups vegetable broth

1 teaspoon fresh ground pepper and salt -- to taste

4 slices dark or whole-wheat bread -- cut in 1/4-inch cubes
 

Preparation / Directions:


In a deep saucepan, saut‚‚ onion and pepper in oil until onion is soft and golden. Add garlic and tomatoes. Reduce heat, cover, and simmer for 30 minutes. Add broth and salt and pepper and bring to a boil. Lower heat and simmer for 10 minutes. Add bread cubes right before serving. 4 servings/Serving size: 1and1/2 cups
