Blue Plum Soup With Red Wine

Ingredients:


1/2 liter small blue plums

1 liter water

1 tablespoon potato or corn starch

8 ounces sugar

23 milliliters red wine
 

Preparation / Directions:


1. You can use overripe or squashed plums for this soup. Rinse them and remove the stones. Boil them until done in the water. 2. Mix the starch in a small amount of water and add to the plums along with the sugar. Add the wine. Serve cold with a dollop of whipped cream or sour cream. Author's Notes: Served as dessert here in Scandinavia. A variation is to add a stick of cinnamon to the pot before boiling the plums. You might also want to remove the peel of the plums.
