Shrimp Scampi 1

Ingredients:


1 pound shelled and cleaned large shrimp -- tails on

1 stick butter -- ( 1/2 cup)

1/2 cup olive oil

4 cloves crushed garlic

4 tablespoons chopped fresh parsley

1 dash cayenne pepper

1/4 cup fresh lemon juice
 

Preparation / Directions:


In a large broiler-proof pan heat the butter, olive oil and garlic on top of the stove. Stir in the parsley, cayenne and lemon juice. Add the shrimp, tossing to coat. Place under the broiler 6 inches from the flame. Broil until done, about 5-6 minutes. Check about halfway through the cooking time and turn if necessary. Serve as an appetizer or as a main dish over rice, pouring the pan juices over each serving. "If you live to Saut‚!" In a large skillet melt the butter, add the olive oil and garlic. Whisk in the cayenne. Add the shrimp, then squeeze fresh lemon juice over the shrimp. Saut‚ adding the parsley just before the shrimp are done.
