Peanut-Shrimp Stir Fry

Ingredients:


2 tablespoons soy sauce

2 teaspoons grated ginger root

1/4 teaspoon red pepper sauce

1 clove garlic -- finely chopped

1/2 pound raw shrimp

2 tablespoons vegetable oil

1 cup cooked spaghetti

4 medium green onions -- cut in 1 inch pieces

6 ounces fresh or frozen chinese pea pods

1 tablespoon vegetable oil

2 tablespoons creamy peanut butter

1/4 cup chopped peanuts
 

Preparation / Directions:


Mix soy sauce, gingerroot, pepper sauce and garlic in large resealable plastic bag. Add shrimp; seal bag. Let stand 15 minutes. Heat 2 tablespoons oil in 10-inch skillet or wok over medium-high heat. Add vermicelli, onions and pea pods; stir fry until onions are crisp tender. Remove mixture from skillet. Heat 1 tablespoon oil in skillet. Add shrimp; stir fry until pink. Stir in vermicelli mixture. Stir in peanut butter until mixture is coated; cook until hot. Sprinkle with peanuts. Nutrition: 1 serving:
