Oven-Fried Perch

Ingredients:

1/2 cup margarine
8 fillets perch or cod or haddock fillets -- 1 1/2 pounds
1 large egg -- well beaten
1 cup fine bread crumbs
1 teaspoon salt -- to taste
1 teaspoon pepper -- to taste
6 slices lemon wedges -- (for garnish)
 

Preparation / Directions:

1. Melt margarine in baking dish in 325 F. oven. (Do not allow margarine to brown.) 2. Dip fish first in melted margarine, then in egg, then in crumbs, coating well; season to taste with salt and pepper. 3. Bake in preheated 375 F. oven 15 to 20 minutes, or until fish tests done. 4. Garnish with lemon wedges. NOTE: Delicious, inexpensive dinner, especially when served piping hot with steamed green vegetables and corn bread.
