Ingredients:


2 pounds chicken parts

1 teaspoon salt and pepper

1 clove garlic -- crushed

1 teaspoon oregano

2 tablespoons vegetable oil

1 link chorizo -- sliced (see below)

1 medium Onion -- chopped

1 medium green pepper -- chopped

1 cup uncooked rice

2 1/2 cups beef broth

8 ounces tomato sauce

1/2 teaspoon saffron

1/2 pound shrimp -- cooked and cleaned

1/2 cup cooked peas
 

Preparation / Directions:


Wash and dry chicken parts. Rub with seasonings. Brown chicken in oil in large skillet. Add chorizo (hot Spanish sausage), onion and green pepper; cook over low heat for 10 minutes. Stir in broth, tomato sauce and saffron; cover and simmer 20 minutes Stir in rice; cover and simmer 30 min longer. Add shrimp and peas; heat through. Allow any excess liquid to cook off and serve
