Croaker Croquettes One

2 cups fish -- flaked, cooked
1 teaspoon lemon juice
1 tablespoon onion -- finely minced
1 tablespoon pimiento -- finely minced
1 tablespoon green pepper -- finely minced
1 cup thick white sauce
1 teaspoon seasoning to taste

Preparation / Directions:

Mix mixture thoroughly. Shape into balls or patties dip in egg prepared as for fillets, then in crumbs, and fry in deep fat at 365F Serve with tomato sauce. Generalized recipe made specific for Croakers. Source: FISHES AND FISHING IN LOUISIANA published 1933 Recipe date: 01/17/33
