1/3 cup butter
1 tablespoon garlic
3 tablespoons peppercorns
36 medium shucked oysters
3/4 cup fresh lime juice
6 ounces clam juice
3 tablespoons butter

Preparation / Directions:

Melt 1/3 cup butter in a skillet, over a medium flame add garlic and peppercorns, heat and stir for 60 seconds add oysters, lime juice, and clam juice or fumet heat and stir until reduced by half stir in remaining butter, until melted serve at once
