Honey Fried Walleye Fillets

1 large egg -- beaten
1 teaspoon honey
1 cup coarsely crushed soda crackers
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 pounds walleye fillets
2 tablespoons vegetable oil

Preparation / Directions:

In a small mixing bowl, combine egg and honey. In shallow dish, combine crackers, flour, salt and pepper. Dip fillets in egg mixture, then dredge in cracker mixture to coat. In a 12" skillet, heat 1/8" vegetable oil over medium heat. Add fillets. Fry four to seven minutes, or until gtolden brown. Turn once. Drain on paper towel-lined plate. Serve with lemon wedges and additiona honey for drizzling, if desired.
