Grilled Garlic Oysters

Ingredients:


4 cups butter

2 tablespoons dijon mustard

1 cup shallot

1/3 cup scallion greens

2 tablespoons garlic

1 cup ground almonds

1 cup parsley

3 cups fresh breadcrumbs

3/4 cup white wine

1/3 cup dry sherry

1/2 teaspoon tabasco sauce

1 teaspoon dill

1/4 teaspoon salt

1/4 teaspoon white pepper

300 medium live oysters

1 cup rock salt
 

Preparation / Directions:


Combine all ingredients (except oysters) in a food processor process until well blended cover and chill for 4-24 hours season with tabasco sauce, salt, and white pepper to taste separate oysters, discarding shallow shell arrange onto a bed of rock salt in a shallow baking pan place 1-1/2 tablespoons filling mixture onto each oyster broil until lightly toasted and golden serve hot
