Abalone With Asparagus

1/2 pound asparagus tips
4 ounces clam juice
1/4 teaspoon white pepper
2 teaspoons mirin
1 teaspoon soy sauce
1 tablespoon cornstarch
1 teaspoon sesame oil
1 tablespoon walnut oil
1/2 teaspoon ginger
1/2 cup chicken broth
1 cup abalone trimmings

Preparation / Directions:

combine clam juice, white pepper, mirin or wine, soy sauce, cornstarch, and sesame oil-mix well heat oil in a wok, over a moderately-high flame add ginger and asparagus tips, stir-fry for 30 seconds add chicken broth, cover, and steam for 60 seconds remove cover add soy mixture, heat and stir for 30 seconds add abalone, heat and stir until abalone is tender and mixture thickens serve hot, with rice
