Smokey Nectarine Glaze For Duckling Or Chicken

Ingredients:


6 medium fresh california nectarines -- up to 8

1/4 cup sugar

1/4 cup corn syrup

1/4 cup catsup

2 tablespoons vinegar

1 tablespoon onion -- grated

1 teaspoon salt

1/2 teaspoon liquid smoke -- (optional)

1/4 teaspoon allspice

1/4 Cup butter
 

Preparation / Directions:


Makes about 2 cups 1. Peel and slice nectarines; mash or whirl in blender to make 2 cups puree. 2. Pour into large saucepan; add remaining ingredients except butter. Simmer 5 to 10 minutes. 3. Use to glaze duckling, chicken or ham, brushing several times over meat while roasting shortly before removing from heat. 4. Stir 1 or 2 tablespoons butter into remaining glaze and serve hot as sauce.
