Herbed Cheese Sandwiches with Artichoke-Tomato Salsa

15 ounces part-skim ricotta cheese
7 ounces crumbled feta cheese
1/2 cup chopped fresh parsley
2 tablespoons chopped green onions
1 teaspoon chopped fresh dill
16 slices rye bread
6 bunches lettuce leaves
---Artichoke-Tomato Salsa
2 medium tomatoes -- chopped
14 ounces artichoke hearts -- drained and chopped
2 teaspoons olive oil
2 cloves garlic
3 tablespoons chopped fresh basil

Preparation / Directions:

Combine first 5 ingredients and spread on half of bread slices. Top with Artichoke-Tomato Salsa, lettuce, and remaining bread slices. Serve immediately. Artichoke-Tomato Salsa: Combine all ingredients in a bowl; cover and chill. Serve with a slotted spoon. Makes 3 cups.
