Portobello Mushroom Burgers

Ingredients:


1/4 cup regular or low-fat mayonnaise

1 clove garlic -- crushed

1 tablespoon lemon juice

1 dash cayenne pepper

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon chopped fresh rosemary

4 large portobello mushrooms -- stems removed

4 whole wheat hamburger buns -- toasted

1 bunch lettuce -- sliced tomato,

1 medium thinly sliced red onion
 

Preparation / Directions:


Prepare barbecue (medium-high heat) or preheat broiler. Mix mayonnaise, garlic, lemon juice and cayenne pepper in small bowl to blend. Set aside. Whisk oil, vinegar and rosemary in another small bowl to blend. Brush mixture liberally over mushrooms. Season mushrooms with salt and pepper. Grill or broil mushrooms until tender, brushing occasionally with oil mixture, about 5 minutes per side. Transfer to bottoms of hamburger buns. Spread tops of hamburger buns with mayonnaise mixture. Serve burgers with lettuce, tomato and red onion Prep Time: 10 minutes Cook Time: 10 minutes Makes: 4 servings Portobello mushrooms are often referred to as being “meaty” and, in fact, they do have a meaty texture. So why not use them as a meat replacement? They make delicious vegetable sandwiches, and even the biggest meat eaters love them.
