Papaya-Mint Salsa

Ingredients:


1 1/2 medium papayas -- peeled, seeded, cut -- into small chunks

1/2 medium red bell pepper -- seeded and diced

3 tablespoons fresh lime juice

1 tablespoon olive oil

2 tablespoons mint -- finely chopped

1/4 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours for the flavors to combine. Use within 24 hours. Makes 3 cups. Notes: Not every salsa has to have chiles, sometimes a salsa's role is just to be moist, cool, and refreshing.
